This healthy avocado quinoa salad is a perfect blend of plant-based protein, fiber, and heart-healthy fats. It’s gluten-free, vegan, and great for meal prep. Enjoy it as a main dish or a side!

Ingredients
1 cup cooked quinoa
1 ripe avocado, diced
½ cup cherry tomatoes, halved
¼ cup cucumber, diced
2 tablespoons red onion, finely chopped
1 tablespoon olive oil
Juice of ½ lemon
Salt and pepper to taste
Preparation
Step 1
Cook quinoa according to package instructions. Let it cool.
Step 2
In a large bowl, combine cooked quinoa, diced avocado, tomatoes, cucumber, and red onion.
Step 3
Drizzle with olive oil and lemon juice. Add salt and pepper to taste.
Step 4
Mix gently to combine. Serve immediately or refrigerate for later.
